What can I start carving as a beginner?

If I were a beginner, what would be the best carving to do?
Starting with wood carving isn't tough.
Every summer, I stayed with my grandparents in a small village by the Volga river in Russia. I recall being six. I sneaked into my grandfather's workshop and found a woodworking chisel. I didn't know what the tool was, but I noticed it had a cutting edge and figured I could cut something with it. Long story short, it was the start of my carving journey. I didn't carve wood that day, though. I found a white brick and started chiseling. I really didn't have any idea what I was carving. I just enjoyed doing it. By the end of the day, I could identify a human face in that brick. I don't remember if I felt joy or frustration, but I know now it was the start of my lifelong journey as a carver.
Next, I used wood and found it better than brick. I chose. Carving wood is my new thing, not brick!
I didn't know anything about different kinds of wood or wood carving. What's the difference between chip carving and relief carving? All those fancy words made little sense to me. I was unaware of the fundamental concepts of wood carving.
I was very fortunate with both sides of my family. My grandpa had a small shop and some workbenches, and I could hang out with him and watch how he worked. To him, his shop was a “hiding place” from his wife, my grandma. But she knew where to find him.On my father's side, the family has a rich history of fine woodworkers and furniture makers. One of my great-grandfathers was a craftsman for a royal house in Saint Petersburg, Russia. My Grandmother shared stories of her childhood in her father's woodworking shop.
She remembered the tunes her dad sang. He was singing while working with wood.My grandfather gave me my first chisel, and my grandmother gave me my first whittling knife. Actually, it was a pocket knife from the USSR, not a whittling knife. Pocket knives are good for simple carving. Those were my carving tools. I didn't have a gouge or any power tools. Not even a real chip carving knife. A basic pocket knife is enough to create something beautiful.
Back then, I didn't know woodcarving would be so significant in my life. Today, I carve for collectors around the globe and private homes. I didn't realize woodcarving could be so rewarding.

As a beginner, what should I carve?
Consider what you prefer: a spoon or relief carvings. Many times, beginners don't understand the big difference between carving a wooden spoon and carving a 3D sculpture with a gouge and a mallet. This is also known as carving in the round.
Nature itself works through the constant interaction of opposites—earth and fire, sun and moon, male and female, dark and light.

I'm starting my first carving project. What should I do?
Reflect on another significant question. What is my favorite carving style? But that's not the only question you need to ask. Another question to think about is: what tools do you own? Do you possess basic wood carving tools or just a knife? Some people only have a chainsaw :). You can carve with a chainsaw, but not a spoon.
I suggest trying out different carving styles. Once more, what hand tools do you own? If all you have is a chip carving knife, you can't carve a spoon, but you can carve other items.
Dopamine acts like transmission fluid: without enough of it, as seen in folks with ADHD, switching attention is hard or it jumps straight to high gear.
(John J. Ratey and Eric Hagerman, Spark)
Dopamine in woodcarving is like the oil for your carving tools: if there’s not enough, similar to individuals with ADHD, your focus can either get stuck or suddenly jump to intense concentration.
